Black bean brownies are a great alternative to traditional flour brownie recipes. I’ve used a variety of different recipes over the years and I’ve liked them all. This recipe here has been modified and is what I use now, in the mountain west. It’s very dry here most of the time. Hope you enjoy.
What you’ll need:
1 15oz can of black beans (unsalted & drained) (mash them well)
1-2 eggs (dependent on dry (2 eggs) or more humid climate (1 egg) )
2 teaspoons vanilla extract
2 tbs cocoa powder
1/4 tsp baking soda
1/4 tsp salt
1/4 cup unsalted peaunut butter
1/2 cup dark chocolate chips
Makes about 15 brownies
Preheat oven to 350 F. Combine all ingredients except the dark chocolate chips. Mix very well until almost smooth, then fold in the chocolate chips. Put into a glass 8×8 oven-safe dish and bake for 12-18 minutes. Pull out of the oven and sprinkle a handful of chocolate chips over the top. Cool for 3-5 minutes and serve.
